Vegan Avocado Chocolate Cupcakes
“Avocado”, a must on my grocery list these days. It has high nutritional values and reduces the bad cholesterol levels in the blood and lower your risk of heart diseases. Initially I have zero idea on what this rough skinned green “FRUIT” adds flavor to any meal or just like that until I read a lot from many sources. I am sharing this link for you to get an idea how important to have this pear shaped fruit in our meal.
Apart from what you have known about this fruit so far, I am presenting to you a simple and quick cupcake recipe.
The preparation is the simplest one so far in my baking. This is totally a Vegan recipe. And I found this recipe online from an other blogger. And the cupcakes are the soft and moist ones i have ever seen. This is because of the light and buttery texture of the Avocados. This is the first time I used the Indian blender to make Avocado puree with few more ingredients. I am hoping you will also try this, for those who are health conscious and have the craving of eating a dessert can try this healthy, vegan cupcake recipe.
3 cups all-purpose flour
6 tbsp Unsweetened Cocoa Powder
1/2 tsp salt
2 tsp baking powder
2 tsp baking soda
2 cups sugar
1/4 cup vegetable oil
1/2 cup soft avocado, well mashed
2 cups water
2 tbsp white vinegar
2 tsp vanilla extract
Preheat oven to 350 degrees F. Place cups and Grease a 12 cup muffin pan. Set aside. Blend all the wet ingredients together in a blender, including the mashed avocado. Add sugar into the wet mix and stir. Mix the wet with the dry all at once, and beat with a whisk (by hand) until smooth. Pour batter into a greased cupcake pan. Bake for 30 to 40 minutes, until a toothpick inserted comes out clean.
I want to make these very often and next time with some frosting…..may be Avocado Frosting 😉♥With Love Prashanthi♥
