Chinese Vegetable Fried Quinoa
Quinoa is like a staple food for us from the last one year. Earlier it was very tough for us to eat and confused how well it goes with other dishes. Almost for one year I did pressure cook the quinoa and have it with our Indian dishes like, Dal, some veg curry, also non-veg curries and also with yogurt too. Eating it in the same way every time is boring. Hence I have been trying in different ways. One of them is the below recipe which I tried and turned out very good and very tasty. This is totally a Chinese fried rice style. I replaced rice with Quinoa. That’s it 🙂 Very simple and easy recipe to try out for your taste buds.
Boil 5 cups water in a sauce pan and add the 2 cups quinoa and cook. Add 1 tblsp olive oil to this to avoid sticking. keep aside this cooked Quinoa and let it cool down.
Take a wok and on high flame, heat the remaining olive oil then add chopped spring onions white part and add Chinese salt. After a stir, add all veggies and stir again. later add white vinegar then soy sauce and after couple of stirs, add tomato sauce and sriracha sauce. Stir finely that all the ingredients incorporated well. Remember that the veggies should be little crunch. Do Not Overcook. Then reduce the flame and add the cooked Quinoa. Mix well with veggies and sauces. Later add salt to your taste and finally add the very important fresh ground pepper(Use the fresh ones for that aroma). Garnish with the green part spring onions. Let the whole dish be on low flame and fry it for 2 minutes. Turn off the flame and serve the dish while little hot and with sriracha as the side. There you go, the healthy yum yum Chinese style Veggie fried Quinoa.
